Italian Meatloaf

Ingredients:

For the Meatloaf

  • 2 lbs ground beef (80/20 recommended)
  • 1 cup Italian breadcrumbs
  • ½ cup milk
  • 2 large eggs
  • 1 medium onion, finely diced
  • 4 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 1 ½ teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon Italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ¼ cup fresh parsley, chopped
  • ¾ cup marinara sauce (plus extra for topping)

Optional Filling Layer

  • 1 additional cup shredded mozzarella cheese
  • ½ cup marinara for layering

For the Topping

  • ½ cup marinara sauce
  • ½ cup mozzarella cheese
  • 2 tablespoons grated parmesan
  • Fresh basil or parsley for garnish
